Cheesy Zucchini Rice Recipe
There are so many things to love about this recipe: it’s extremely easy to make, it integrates veggies that your kids might not want to eat, it makes enough for a small army. I could probably eat this by itself, but just add a piece of chicken and you have a full meal!

Cheesy Zucchini Rice Recipe

Ingredients:

  • 2 cups of Chicken broth
  • 1 cup of Long Grain Rice (I used Jasmine)
  • 1 Tbsp Butter
  • 1 Zucchini, shredded
  • salt and pepper to taste
  • 1 cup Cheddar cheese, shredded

Directions:

  1. In a medium sauce pan add in your butter broth and rice. You can add your salt and pepper here if you want as well. I put a pinch of each in.
  2. Bring to a boil, then reduce your temperature to medium and cook on low for about 20 minutes. Don’t stir except to check to see if its done.
  3. Remove from heat, add in your zucchini and shredded cheese and stir. Replace your lid and let it sit for about 5 minutes. The heat from the rice will melt the cheese, and warm up the zucchini.
  4. Stir again and serve warm. This is great hot off the stove, or reheated later.
