It’s BBQ Season! Well, it will be officially this weekend. If you’re getting ready grill out – don’t forget your sides! And don’t forget, you can save a ton by making it yourself. Not only will you end up with a lot more than buying it from the store – you’ll save a lot of money. So let’s start with a classic and a favorite. 🙂
Ingredients
- 8 medium potatoes (approximately 6 cups)
- 1 cup Hellman’s Mayonnaise
- 1 cup minced onion
- 3 tbsp vinegar
- 2 tsp salt
- 1/4 tsp pepper
- 2 eggs- hard boiled and chopped
- 1 cup celery sliced
Boil potatoes until tender. Do not over boil, or it will turn to mush. Allow to cool and cut into cubes.
In a large bowl mix together mayonnaise, onion, vinegar, salt, pepper and eggs. Add potatoes and celery and toss. Cover and refrigerate at least 2 hours.
