More and more I hear of people using different flour types for cooking. Either they're gluten free like me, are doing the paleo diet or just like the different textures and flavors of different flours. Being gluten free not only has a lot of health benefits for me, but other family members have started to eat gluten free because they just feel better. 

On the built in hutch in the kitchen the whole shelve is full of different flour types from potato to fava and several in between. When I received my review package from Just Almonds I was excited - I had never used Almond Flour for baking.

I'm going to be honest here, I tend to avoid almonds because I'm not a huge fan of nuts. I put them in cookies, in breads and use the oil but I've never been a fan of eating just plain almonds. But guess what - Almonds aren't nuts! Yup, that's right! They're actually drupe, which is a type of fruit. Now I love my fruit, so my argument for not eating them has gone out the window! 

My first thought was to make a cranberry almond bread, I make this at the holidays but I use rice flours. I wasn't sure how the coarser texture of the flour would change my recipe. So I decided to try something new. What would you make with almond flour if you were given some? I decide to make some Almond Berry Cakes - and I have to tell you they were fantastic! And really since almonds are fruit they're just little fruit cakes :). 

Working with the flour was easy. The texture was a bit coarser than rice or wheat flour but I used it with my recipe and it worked great. And one of my favorite things about it - it's just almonds! Nothing else is added to it, and it's not cut with other ingredients to stretch it out. Now the recipe used most of the bag of flour, but it was sure worth it. As for the whole almonds? They are being split for my bread recipe for the upcoming holidays!

I would make my famous chocolate caramel brownies. I think adding the almond flour, would add an unique flavor to it.

I really had no idea so I went and searched Pinterest and found a recipe for Rustic Raspberry Galette that uses Almond Flour and looks yummy! I also found a recipe for waffles, but that doesn't seem nearly as exciting!

Oh my. i love almonds. I love the health benefit they provide. I put them in my salads, ice cream. I bake with almond flour.

Almond flour would be great for pie crusts. I would like to try using it in my snickerdoodle recipe! My kids love snickerdoodles. Also would like to try using almond flour as a base for a coating for pork chops.
